How Are Michelin Restaurants Selected in Hangzhou?

While some argue that Chinese cuisine doesn’t need foreign standards, the Michelin Guide has been globally recognized for over 100 years. Many top chefs, regardless of location, hope to receive Michelin recognition. Since the first Michelin Guide in Hangzhou, it has sparked debates within the local food scene, leading to both excitement and critiques. Ultimately, the guide brings more exposure to Hangzhou’s dining industry and contributes to its growth.
Michelin’s Five Standards

According to Michelin Guide’s International Director, Gwendal Poullennec, the evaluation process involves a full-time team of professional inspectors from over 20 countries, who anonymously review restaurants. The inspection process in Hangzhou took several years, during which inspectors saw the potential of the city’s culinary scene and its unique lifestyle.
